This dish is presented in various ways at Chinese restaurants. The most prevalent way is as part of a cold dish, accompanied by a mini fruit salad. There are two other methods of presenting this dish.
Crystal Jade restaurants shallow-fry the prawns and coat it in mayonnaise. It is delectable but fattening of course and costs $16.80. However, the generous coating of mayonnaise can be a turn-off if it curdles with time.
Prosperous Kitchen at Thomson Plaza has a slight variation on Crystal Jade's version. It tops the prawns with pork floss and adds this sweet accent to the already succulent taste given off by the prawns. This costs $2 less at $14.80. It is so good that even my dad, who does not like fried dishes, acknowledges this dish as tasty and a good one to order.
