CHARLIE'S PERFECT TUNA SALAD
2 cans (6-1/2 oz. ea.) tuna, drained and flaked
1/2 cup Hellmann's ® or Best Foods ® Real Mayonnaise
3/4 cup thinly sliced celery or cucumber
1/4 cup sliced stuffed Spanish olives (optional)
1 hard-cooked egg, chopped (optional)
1 Tbsp. finely chopped fresh parsley (optional)
1 Tbsp. finely chopped onion (optional)
1. In medium bowl, combine all ingredients. Chill, if desired, and serve on crackers, bread or on a bed of mixed greens.

CREAMY TUNA NICOISE
1/4 cup Hellmann's® or Best Foods® Real Mayonnaise
1/4 cup chopped red onion
1/4 tsp. dried thyme leaves, crushed (optional)
1 can (6-1/2 oz.) tuna, drained and flaked
1 small tomato, seeded and chopped*
1/2 cup frozen cut green beans, thawed
1/4 cup sliced pitted Nicoise or ripe olives
1 hard-cooked egg, chopped
1. In medium bowl, combine Hellmann's or Best Foods Real Mayonnaise, onion and thyme and, if desired, salt and pepper to taste. Stir in remaining ingredients. Chill, if desired.
*SUBSTITUTION: Use 1/2 cup halved grape or cherry tomatoes.

TUNA MACARONI SALAD
8 ounces elbow macaroni
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1-1/2 Tbsp. sweet pickle relish
1 Tbsp. white distilled vinegar
1 tsp. salt
1/4 tsp. ground black pepper
1 can (6 oz.) tuna, drained and flaked
1/3 cup chopped celery
1/3 cup chopped or shredded carrot
2 Tbsp. finely chopped onion
1. Cook macaroni according to package directions; drain and rinse with cold water until completely cool.2. In large bowl, combine Hellmann's ® or Best Foods ® Real Mayonnaise, relish, vinegar, sugar, salt and pepper. Stir in macaroni, tuna, celery, carrot and onion. Chill, if desired. Toss, if desired, with additional Mayonnaise before serving.

TUNA-APPLE SALAD WITH SHREDDED CARROT
1/3 cup Hellmann's® or Best Foods® Real or Light Mayonnaise or Just 2 Good!® Mayonnaise Dressing
1 can (6 oz.) tuna, drained and flaked
1 small apple, cored and chopped
1 small carrot, shredded
1. In small bowl, combine all ingredients. Season, if desired, with salt and ground black pepper. Serve, if desired, with crackers or pita bread.

1/2 cup finely chopped celery
1/4 cup chopped green onions
1. In medium bowl, combine Hellmann's ® or Best Foods ® Real Mayonnaise, pickle relish and lemon juice. 2. Stir in tuna, celery and green onions. Serve, if desired, with pitas, crackers or bread.

FRESH SALMON CAKES
1 pound skinless salmon fillet, cut into 1/2-inch chunks
3/4 cup crumbled Ritz crackers 1/4 cup heavy cream
1/4 cup finely chopped red onion
1 tablespoon minced fresh dill
1 tablespoon Dijon mustard
1 large egg
1 garlic clove, minced
1/4 teaspoon salt
1/2 cup flour
2 tablespoons extra-virgin olive oil
Combine the salmon, cracker crumbs, cream, onion, dill, mustard, egg, garlic and salt in a medium bowl. Gently form into 4 patties, using 1/2 cup of the salmon mixture for each. Spread the flour on a plate and lightly coat each patty, shaking off excess. Heat the oil in a 12-inch nonstick skillet over medium heat, until hot but not smoking. Add the salmon patties and cook, turning them after a while.
