Chicken recipes

ZESTY LEMON CHICKEN SALAD

1/4 cup Hellmann's ® or Best Foods ® Real Mayonnaise
1/4 cup sour cream
1 tsp. grated lemon peel
1 tsp. lemon juice
1/2 tsp. salt
1/8 tsp. ground black pepper
3-1/2 cups cut-up cooked chicken (about 1 lb.)
1/2 cup thinly sliced celery
1/4 cup thinly sliced green onions
1/4 cup slivered almonds, toasted (optional)

1. In large bowl, combine Hellmann's ® or Best Foods ® Real Mayonnaise, sour cream, lemon peel, lemon juice, salt and pepper. Add chicken, celery and green onions; toss to coat. Chill, if desired. Garnish with almonds.

NAPA VALLEY CHICKEN SALAD SANDWICHES

3/4 cup Hellmann's® or Best Foods® Real Mayonnaise
1 tsp. chopped fresh rosemary (optional)
1/4 tsp. salt
1/8 tsp. ground black pepper
4 cups cut-up cooked chicken (about 1-1/2 lbs.)
3/4 cup halved seedless red grapes
1/2 cup coarsely chopped walnuts, toasted (optional)
1 loaf peasant or sour dough bread, sliced
Arugula or lettuce leaves (optional)

1. In large bowl, combine Hellmann's® or Best Foods® Real Mayonnaise, rosemary, salt and pepper. Add chicken, grapes and walnuts; toss to coat. Chill, if desired.
2. To serve, assemble into sandwiches with arugula.

CHICKEN AND ALMOND SALAD

3 cups cooked diced chicken
3 green onions, thinly sliced
2 celery sticks, thinly sliced
1/2 cup blanched almonds, lightly toasted
1 cup sour cream
1/4 cup fresh lemon juice
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

In a large bowl, combine chicken, onions, celery and almonds. Add remaining ingredients; toss to coat chicken mixture with dressing. Spoon into dishes and serve.
